Serve in a gin and tonic bowl with a twist of orange
Muddle the ice, sugar and mint leaves in a tall glass. Add the lime juice and rum and mix well. Add a dash of soda.
Add 1 large icecube to the serving glass (old-fashioned/ tmbler)
Mix and add the engredients
Garnish with an Orange twist.
Kinda like an Old Fashioned – but using vermouth instead of sugar.
Mix with ice and sieve into a coup glass – cherry to garnish. Don’t let it sit on the ice for long, or its too wet.
2 eggs, separated
1/4 cup sugar, divided
1/2 cup rum or brandy
1 1/2 cups whole milk
1/2 cup double cream

Beat the egg yolks with 3 tablespoons sugar until fluffy. Stir in milk, cream and spirit.
In a separate bowl, beat the egg whites with the remaining 1 tablespoon of sugar until soft peaks form.
Fold the egg whites into the yolk mixture.
Divide between four rocks glasses or punch or tea cups.
Garnish each with freshly grated nutmeg.

40ml gin
20ml pear liquor (Xante)
50ml cloudy apple juice
20ml lemon juice
10ml sugar syrup – (to taste)
50ml soda water (or more if you like it a little longer)
1/2 egg white

Mix everything except soda water in a shaker and shake. Strain into a martini glass and top up with soda water.
v2- riffed off a classic gin fizz – but 1 shot of gin swapped out for pear.
