White bean Ragu

  • 1 onion, fine dice
  • 1 garlic clove
  • 1 tsp tomato puree
  • 2 tablespoons finely grated Parmesan, plus some to dress.
  • 1 can cannellini beans
  • 1 cup vegetable broth
  • 6 cherry tomatoes, halved
  • 2tsp chopped flat-leaf parsley plus some to dress.

Serve on toast as a starter or with something like baked fish as a main.
